Such is the spirit that drives The Craftsman, Edwards’ newest culinary venture. Backed by over 20 years of high-end restaurant experience from husband and wife team Christopher and Janelle Schmidt, the Craftsman is dedicated to honoring but never imitating the classics. The result is a counter-service experience that balances artisan expertise with everyday approachability, centered around a menu that takes risks in re-imagining the greats.
Think BLTs built with unctuous smoked pork belly. Tempura-fried squash blossoms stuffed with pimento cheese and accented with sweet pepper jelly. An ever-changing cast of craft beers showcasing the best of Colorado and beyond. A menu that evolves with the seasons. A communal vibe, an open kitchen, and a welcoming space that feels like home.
As long as the world keeps turning, the Craftsman will keep spinning the classics. Just don’t be surprised if they’re a little different than your dad remembers them.

Beer is the blood that runs through our veins at Craftsman. The draft and can menu represent a constantly rotating selection of the best beers we can get our hands on from Colorado and beyond. We strive to keep the menu fresh by making trips to pick up kegs all over the state. We love this interaction and the relationship with the brewing community that we have built is truly incredible.
